We really love our red beans and rice recipe because it’s so full of flavor and it’s very easy to make. I mean, we don’t even soak the beans ahead of time. That’s how easy this is to make using the electric pressure cooker. We use the Ninja Foodi but any modern electric pressure cooker should work just fine. Let’s get started!
Here’s the ingredients you need:
- 1 onion diced
- 1 bell pepper diced
- 3 celery stalks chopped
- 3 garlic cloves minced
- 2 pound Beef Sausage cubed
- 1 lb bag dry kidney beans (look through the beans quickly to make sure nothing is in there that should not be)
- 5 ½ cups low sodium chicken broth
- 1 tsp salt
- 1/4 tsp pepper
- ½ tsp thyme
- 2 bay leaves
- Minute rice and water per instructions on box
What you do:
Add all ingredients to the pressure cooker except the bay leaves. Stir just enough to mix all ingredients together. Now, you can add the bay leaves right on top so they’re easy to find and remove later. Cover the pressure cooker and close vent to seal. Turn on high for 90 minutes. Natural release for 15 minutes when done cooking and then remove lid carefully.
Time to make it thick and creamy!
First, remove those bay leaves! Then, use a potato masher to mash no more than 1/3 of the red beans mixture. This will thicken it up and add a more creamy consistency to it. BE CAREFUL not to scratch the pot while mashing if it’s nonstick or ceramic.
Almost ready to eat red beans and rice!
We use minute rice since it’s so quick and easy to make and still tastes good. Make minute rice according to the directions on the package and serve. With this red beans and rice, you’ll definitely want leftovers since the flavors are even better the next day!
